The ASSOLUTO grapes are grown in a 45+ year old vineyard and are later blended with other Verdicchio biotypes. They are harvested slightly early, taking great care of preserving the integrity of each grape by using small crates. Following the stages of cold maceration and soft pressing, fermentation takes place in wooden barrels and in contact with fine lees, over a period of 6-8 months. The wine is bottled after 16-18 months to ensure optimum aging. ASSOLUTO is stored in bottles for another 12 months until it reaches full flavour, nobility and perfection.
Of a bright pale-yellow hue with golden highlights, the sensory profile of this wine is very complex. It has a fragrant and concentrated aroma, where its intense floral, vegetative and exotic bouquet is combined with toasty undertones. To the palate, it is full-bodied and engaging, crispy, fresh and very expressive, with an aftertaste of peach stones and peanuts over the ever-present mineral base. It has a very long finish, with intense flavours, elegant and strong balsamic undertones.

Assoluto lends itself to the strongest combinations. It is an excellent companion to any seafood dish, including shellfish, crustaceans and raw fish, to fresh herbs, mushrooms and truffle-based first courses, and to medium-hard cheeses.
