The three grape varieties are harvested and vinified separately.
Winemaking:

It is a wine of remarkable structure and elegance, soft and powerful at the same time.

The three grape varieties are fermented separately in stainless steels in contact with its own skins at about 26°-28°C for about 20 days. In January, the last part of the Montepulciano grape (the one that undergo a drying process) is fermented. After this last fermentation we blend the wine masses together and we refine them in French barriques for about 18 months before bottling.

Colour: Deep lively purple red with violet reflections.
Perfume: Very intense aromas of ripe red fruits such as black cherry, blackberries and plums, spicy aftertaste with leather notes and hints of vanilla and chocolate.
Flavour: Warm, full-body and very fruity, rich and enfolding on the palate, with soft tannins and fruity finish.

Pairings:
Perfect with a big veal steak, game and braised meat, strong mature cheeses.


Harvest

NORMAL

The three grape varieties are harvested and vinified separately. Grapes are collected in small boxes and immediately undergo soft pressing. Only for the Montepulciano: half of it’s vinified in October and half of it is dried hanged on wires in a ventilated room for about two months and then vinified.
